Baida popping candy (oatmeal flavor)


The “Jin Tiao” Baida Popping Candy (Oatmeal Flavor), produced by Guangdong Shantai Foodstuff Co., Ltd., underwent an authoritative sensory evaluation by the International Taste Institute in Brussels in 2025. The assessment employed a rigorous double-blind testing methodology. An independent jury comprising over 200 top chefs and sommeliers from more than 20 countries evaluated the product based on the five International Hedonic Sensory Analysis (AFNOR XP V096A) criteria.

 

The product achieved an overall score of 72.0%. Among the specific dimensions, its Texture​ received the highest score of 78.8%. The jury praised its “crisp shards that create a pleasant popping sensation in the mouth” and specifically noted that the “well-integrated oats” enhanced a “fun and lively crunchiness.” The scores for Olfaction (72.4%)​ and Taste (72.4%)​ were well-balanced. The jury described its aroma as “sweet and mild with pleasant notes of caramelised sugar, vanilla, and a hint of toasted bread,” and its flavor profile as a “rich, biscuit-like taste with pleasant notes of oats and subtle caramel.”

 

The jury’s general comment stated: “This is a good product with a unique quality, offering a fun popping action that brings nostalgia and enjoyment. The candy has a nice blend of light sweetness, oats, and a surprising balance of flavour and texture.” Concurrently, the jury provided valuable suggestions for enhancement, such as: increasing the intensity and longevity of the popping sensation, enhancing the complexity of the aroma, improving the vibrancy of the visual appearance, and considering the addition of tangy flavors like citric acid or raspberry extract to elevate the taste profile.

 

This evaluation report not only affirms the success of Baida Popping Candy in terms of flavor and texture but also offers a professional, international perspective for its future product refinement.
